Hope you won’t mind the noob question but how do I know what DNS I’m using? (I’m running Linux-Mint)
You can visit something like https://www.dnsleaktest.com/ or https://ipx.ac/run to see where your queries are routed.

This is how the new DNS entry is created. I think your old DNS service provider is listed under [resolve] so far.
In /etc/systemd/resolved.conf, add the following:
[Resolve]
DNS=193.110.81.0#dns0.eu
DNS=2a0f:fc80::#dns0.eu
DNS=185.253.5.0#dns0.eu
DNS=2a0f:fc81::#dns0.eu
DNSOverTLS=yesrestart the systemd-resolved service new
Their privacy policy seems good

Does anyone know how to configure DoH, DoT and the rest? I couldn’t find it documented there
I have speedport smart 3 router with 1&1 versatel. When i let the nameserver get retrieved automatically from 1&1 it only uses versatel dns servers in Germany. When i enter fixed primary and secondary DNS IPs from the dns0.eu nameservers, however https://www.dnsleaktest.com/ shows that it uses google cloud servers in washington. So i rather stick with the 1&1 DNS.
