It gives (literally) more color to the setting. I like having the commoner perspective in the world, and I also like getting a better idea of what the Targaryen dynasty prior to Game of Thrones was actually like (the oldest characters in Game of Thrones are kids in A Knight of the Seven Kingdoms).
Do you think it would be enjoyable to someone who really liked the books, mostly liked the show, and was completely sick of the entire thing by the end of the show?
Not sure, since I never read the books, though apparently there are a few differences. I think even if you got sick of GoT you might like this, since (at least for now) the show seems less cynical. It feels kinda refreshing.
