    Cooked enough of the Middle East inspired chicken, lamb and pilaf, from last night, for two nights. So my house is on easy street in terms of cooking dinner for tonight! Might take the dog for a walk with all that extra free time :)

    Had Escombros (little tiny itty bitty fried squiddies), some Thai beer (Chang lager) a friend shipped over (day off beer is delicious) and later some bubbly water, brie, chorizo & rosemary crackers…

    Made a chicken curry with rice. It could’ve done with more simmering as the liquids were a bit too liquid-y and the solids were a bit too solid-y, but it was cooked enough for human consumption so it had to do. Not much you can do sometimes if you’re making it after work and everyone’s waiting hungrily 🤷🏼‍♀️

    Trader Joe’s carnitas style pork with zaderans Spanish rice. 8hrs in the Crock pot on low. 20 min of simmering for the rice. Add cheese. The pork was in the deep freezer for more than a year. Best meal of the season
